Jacaré: do Pantanal para sua mesa
A história do Pantanal Matogrossense é marca-
da por curiosidades. Quem diria que o jacaré – ani-
mal perigoso, característico da fauna local – seria o
grande responsável por gerar mais desenvolvimento
para centenas de famílias da região. Pois a carne
do bicho está fcando famosa por seu sabor exótico,
transformando-se no carro-chefe da Cooperativa dos
Criadores de Jacaré do Pantanal (Coocrijapan).
Localizada no município de Cáceres (MT), a
cooperativa começou a funcionar em 1990 e hoje
é proprietária do primeiro frigorífco certifcado
de carne de jacaré (Caiman yacare) da América
Latina, oferecendo ao mercado vários subprodu-
tos do animal na cadeia produtiva. Atualmente,
possui 45 mil animais em tanques divididos por
idade e tamanho, gerando 30 empregos diretos e
mais de 100 indiretos.
Logo no início da década de 90, alterou sua po-
lítica de manejo e, no lugar de jacarés adultos, pas-
sou a fazer a extração dos ninhos de populações na-
turais para criação em cativeiro. Com isso, uma vez
por ano, os cooperados da Coocrijapan percorrem o
Pantanal em busca de ovos de jacarés. A coleta é
cuidadosa e segue um ritual. Eles devem ser trans-
portados na posição que foram encontrados, en-
voltos no mesmo material do ninho, sempre acom-
panhando a temperatura e a umidade originais.
Depois, são abrigados numa espécie de berçário e,
passados três meses, os animais são abatidos, tra-
zendo grandes lucros aos criadores.
Toda essa operação é autorizada pelo Instituto
Brasileiro de Apoio ao Meio Ambiente. Para poten-
cializar ainda mais os negócios, a cooperativa vem
trabalhando no aprimoramento de um sistema
de monitoramento desde 2005. A intenção é
garantir a conservação da espécie, por meio
de práticas de manejo menos impactan-
tes possíveis e, assim, assegurar a sus-
tentabilidade na criação.
Alligator: from Pantanal to your table

would ever say that the alligator – a dangerous animal, characteristic
of the local fauna – would be the greatest responsible for generating
more development to hundreds of families of that region? The meat of
this animal is becoming famous for its exotic favor, becoming the main
dish of Cooperativa dos Criadores de Jacaré do Pantanal -Coocrijapan
Cooperative of Alligator’s Breeders of Pantanal- Coocrijapan).
The cooperative is located in the municipality of Cáceres (MT), it
started to work in 1990, and today it is the owner of the frst certifed
cold-storage room of alligator’s meat (Caiman yacare) of Latin America,
offering to the market various sub-products from the animal in the
productive chain. Nowadays, it has 45 thousand animals in tanks
divided by age and size, generating 30 direct jobs and more than 100
indirect ones.
Right at the beginning of the 1990’s, it altered its handling policy, and
instead of adult alligators, it started to make nests extraction of natural
populations to breed in captivity. Thus, once a year, the members of
Coocrijapan go around Pantanal searching for alligator’s eggs. The
collection is careful and follows a ritual. They should be transported on
the same position they were found, involved on the same material of the
nest, always following the original temperature and humidity. After that,
they are sheltered in a kind of nursery, and after three months, the
animals are killed, bringing great proft to the breeders.
The whole operation is authorized by the Brazilian
Institute of Support to the Environment. To increase
business even more, the cooperative has been
working on the improvement of a monitoring system,
since 2005. Its intention is to guarantee the species
conservations, through the practice of least
impacting handling possible, and thus, ensuring
sustainability in the breeding.
